because I didn’t even use a recipe when I made them! I threw everything together based on instinct, and WOW — they turned out soft, chewy, perfectly spiced, and absolutely Christmasy.


I had to write this down because not only did they turn out delicious, they’re honestly one of the easiest gluten-free cookies I’ve ever made. And the powdered-sugar coating makes them look like they were dipped in fresh snow — so festive and perfect for holiday baking.

Ingredients

  • 2.5 cups Bob’s Red Mill Gluten Free 1-to-1 Flour

  • 1 tbsp Club House Pumpkin Spice

  • 1 tsp Baking soda

  • 1/2 tsp Salt

  • 1.5 sticks salted butter (¾ cup), softened

  • 1.5 cups brown sugar

  • 2 tbsp vanilla extract

  • 1 large egg

  • 1/2 cup powdered sugar (for rolling)


Instructions

1. Cream the butter & sugar

Beat softened butter and brown sugar until light and fluffy. This gives you that soft, chewy cookie base.


2. Add the wet ingredients

Mix in the vanilla and the egg until smooth.


3. Combine the dry ingredients

Whisk together the gluten-free flour, pumpkin spice, baking soda, and salt.Fold into the wet ingredients until the dough forms.


4. Chill the dough

Refrigerate for 30–60 minutes.This keeps the cookies thick, soft, and bakery-style.


5. Roll in powdered sugar

Scoop into balls and roll generously in powdered sugar.The more the better — it gives that beautiful snowy, crackled Christmas cookie look.


6. Bake

Bake at 350°F for 10–12 minutes.They should look slightly underbaked in the center — they’ll set as they cool.
