  • 2 medium cucumbers, sliced

  • 3 Roma tomatoes, cut into wedges

  • ½ cup feta cheese, crumbled

  • 1 tbsp olive oil

  • ½ lemon, juiced

  • ½ tsp oregano

  • 1 clove garlic, minced

  • Freshly ground pepper


Tzatziki:


  • 1 cup Greek yogurt

  • ½ cucumber, grated and drained

  • 1 clove garlic, minced

  • 1 tbsp olive oil

  • ½ lemon, juiced

  • Salt to taste


Directions


  1. Roast the Chicken: Preheat oven to 400°F (200°C). Rub chicken with olive oil, garlic, oregano, paprika, salt, pepper, and lemon juice. Roast 45–50 minutes until golden and crispy.

  2. Make the Potatoes: Toss with olive oil, lemon, garlic, and oregano. Roast 35–40 minutes, flipping halfway.

  3. Mix the Salad: Combine cucumbers, tomatoes, and feta with olive oil, lemon juice, oregano, garlic, and pepper.

  4. Tzatziki: Mix everything in a bowl, chill 15 minutes.

  5. Serve & Enjoy: Plate it all together for a fresh, balanced, and flavorful meal.
